Description
Iron is a constituent of hemoglobin and it takes part in oxygen transport. It also plays an essential role in many enzymes required in metabolism. Heme iron from animal foods is absorbed better than nonheme iron. Iron is abundant in meat, inner organs and whole grain products. Vitamin C ingested together with iron promotes the absorption of iron while tea, coffee and dairy products prevent the absorption. Iron deficiency causes anaemia due to low hemoglobin.
