Trans fatty acids are formed from unsaturated fatty acids during the hardening process of oils. In addition trans fatty acids are formed naturally in ruminants' rumen and therefore their meat and milk contain small amounts of trans fatty acids. Trans fatty acids function in the body the same way saturated fatty acids do. The intake of trans fatty acids is low in Finland, under one percent of total energy intake, whereas the intake of saturated fatty acids is much higher, approx. 14% of total energy intake.
