Description
Dietary fat occurs in triglycerides in food. Triglycerides contain three fatty acids attached to it. Fatty acids determine almost completely the properties of fat. Fats containing mainly saturated fatty acids are solid in room temperature. There are no double bonds in saturated fatty acids and they are non-reactive. The high consumption of saturated fats raises LDL-cholesterol level. Animal fats are the biggest source of saturated fatty acids.
